Preparation

Step 1

Boil 2 cups of water in a small pot. Add the sugar and stir until dissolved. Turn the heat off.

Step 2

Break apart the tamarind into small pieces and add to the hot water. Let the tamarind steep for 30 minutes.

Step 3

Strain the mixture through a fine coffee filter or colander into a pitcher. Add the rest of the water and taste the tamarind and adjust the sweetness if needed. Add the rosewater if preferred. Serve Chilled.

1 Package of Dried Tamarind (200 grams)

6 Cups of Water

4 tbsp. of Sugar

1/2 tsp. of Rosewater (optional)

Tips and Tricks

Tip #1

Though hard to find, fresh tamarind will give the best flavor, and if possible should be used instead of dried tamarind.

Tip #2

Depending on the tamarind the amount of sugar may vary. Sometimes you may need to double the amount of sugar if the tamarind is very acidic. Taste the tamarind and adjust the sweetness a tablespoon of sugar at a time.
