Preparation

Step 1

In a large bowl whisk together the olive oil, lemon juice, garlic and salt.

Step 2

Wash the cucumbers very well and remove the ends. Cut each cucumber lengthwise in half. Then take each half and cut into three pieces. Then finely chop the pieces. 

Step 3

Cut each tomato in half and discard the seeds. Then finely chop the tomatoes keeping the tomatoes the same size as the cucumbers.

Step 4

Wash the parsley very well and remove all the stems. Finely chiffonade the parsley until you havea 1/4 of cup of parsley leaves. Finally finely dice the shallot.

Step 5 

In the large bowl with the dressing, add all the vegetables and mix well. Serve the salad chilled.

5 Persian Cucumber

2 Tomatoes

1 Shallot

1 Small Bunch of Parsley

2 tbsp. Olive Oil

2 tbsp. Lemon Juice

1 Minced Garlic Clove
