Wash the lemons very well. Then slice into thin slices. Place the slices into the bowl of a stand mixer.
Add the sugar into the bowl and with a paddle attachment, mix the lemons on the lowest speed setting. Let the mixture mix for 10-15 minutes.
Add 1/4 of the water slowly into the bowl while mixing on low speed. Adding the water slowly will help avoid any messes.
After mixing for five minutes the mixture should resemble a thick syrup. Add an herb of your choice into the mixture then cover with plastic wrap and chill in the refrigerator until you are ready to use.
To serve, add the remaining water and mix until all the sugar is dissolved. Strain and serve over ice. Garnish with a slice of lemon and the herb that you chose.
5 Whole Lemons

2-3 Sprigs of Fresh Mint or Lavender
Tips and Tricks
Washing the lemons is very important for this recipe. If possible try to find unwaxed and organic lemons. If not let the lemons soak in a water-vinegar solution, this will help remove the wax layer and anything else that is on the lemon. Scrub the lemons under water after soaking for 10 minutes in the vinegar-water.
If you don’t have access to a stand mixer you can use your hands. Massage very well, making sure you rub the sugar into the lemon skins and squeezing the lemons and releasing all of their juices.
The sugar acts as an abrasive releasing all the lemon oils found in the skin. This creates a wonderfully strong lemon flavor.
