Preparation

Step 1

Wash the cucumbers very well and remove the ends. Use a grater or a food processor to grate the cucumbers with their skins on and then set aside.

Step 2

In a large bowl, mix together the yogurt, garlic, mint and salt. Then gently fold in the cucumbers and mix until everything is incorporated evenly.

Step 3

Place in the refrigerator for at least one hour before serving. 

Ingredients

4 Persian Cucumbers

1 1/2 Cup of Homemade Yogurt

2 Garlic Cloves Minced

1 tbsp. ofDried Crushed Mint 

1 tsp. of Sea Salt

 

 

 

 


Tips and Tricks

Tip #1

Persian cucumbers have a sweeter less bitter taste that gives the salad a delicious flavor. However if you cannot find Persian cucumbers any cucumber would work. 

 

Tip #2

If you like your yogurt salad to be thicker in consitency, you can strain the cucumbers and/or use labneh which is a Middle Eastern yogurt that has been strained until it becomes very thick in consistency
