In a saucepan, add the sugar and the orange juice. Bring to a boil then let the syrup simmer for 10 minutes. Add the lemon juice and orange peel to the syrup and simmer for an additional 5 minutes. Remove from the heat and leave to cool. Once cooled, strain the syrup and transfer into a bottle.
To serve: mix 1 part syrup with 3 parts of sparkling water. Pour over ice in a chilled glass and garnish with an orange slice.
